One thing I enjoy about living here in Long Island is that there is usually a nice change of season that signals the end of summer.  The air begins to get cool and crisp in the afternoon and as the evening begins to settle in,  you can smell woodsmoke in the air from folks using their fireplaces.  Summer's over and it's time a cook's thoughts turn to soup.  Usually, at the first snap of cold weather, I'll make a batch of Vermont Cheese soup.  Soft and comforting, it's like a warm blanket on a crisp fall day.
