Ranch Salad Dressing

With the onset of Spring, my menus usually get lighter.  Quite often, I enjoy a large salad on its own as a dinner entree.  Here's a zesty take on the traditional Ranch salad dressing.  Although, I list fresh basil as an ingredient, feel free to experiment by adding other fresh herbs!

Zydeco Cha-Cha Salad Dressing

Clifton%20Chenier.jpgToday's recipe is named after a song that was created by the famous zydeco musician, Clifton Chenier.  For those of you who don't know what zydeco music is, let me explain.  It's a musical style which grew out of the traditions of French Acadian accordion music.  Typically, the lead instrument is a wild accordion accompanied by someone scraping the daylights out of a washboard along with the syncopated rhythms of drums, horns, bass and guitar.  It is a wonderful, happy music and if you haven't heard any zydeco, you should seek it out! 

Anyhow, the story I have to go with this recipe is about ol' Clifton Chenier.

Blue Moon Sauce

Howdy!  This sauce is actually a blue cheese salad dressing, but I also like to use it on broiled fish, buffalo chicken wings or grilled chicken.  Anyhow,  try it out!

Ingredients:

1 1/2 cups crumbled Blue Cheese

1 1/2  cups Mayonnaise

1/2 cup Sour Cream

1/4 cup Malt Vinegar

1 TBS dry White Wine

1 tsp Frank's Red Hot Sauce (use Tabasco Sauce if you want it hotter)

1/4 tsp White Sugar

Dry Spice Mix:

1/2 tsp Basil

1/4 tsp Thyme

1/2 tsp Cracked Black Pepper
