Rice Pudding
Here's a simple dessert recipe that employs any leftover rice you may have on hand! Rice Pudding is a dish that originated in Asia and in the early days of American colonial cooking it was known as "Poor Man's Pudding". What I like most about this dish is that it is similar to a bread pudding whereby it lends itself to experimentation by adding and subtracting various ingredients to suit your personal taste.
Sweet Loretta's Peanut Butter Pretzel Pie
This past month has been a hectic time for the family here in Long Island what with graduation parties, barbecues, 4th of July parties and the sort of social gatherings that suddenly appear on your social calendar this time of the year. Sweet Loretta, my better half, usually whips up one of her specialty pies for these hoop-dee-doos that fits the bill perfectly--- something a little lighter for a summertime menu --- so today we feature one of her creations, the Peanut Butter Pretzel Pie! This is one of my favorites as the sweetness of the pie filling is perfectly balanced by the saltiness of the pretzel pie crust!

Sweet Loretta's Lemonade Pie
Every year when we get our first stretch of warm weather up here in New York, Sweet Loretta makes a couple of lemonade pies. This is a light dessert that gives you a nice combination of sweetness and a slight tart overhang with every bite. Mmmmm! When I asked Sweet Loretta if there was anything she wanted to tell my blog readers about this recipe, she grinned and said, "You'd best make two, as one is not enough..."

Albino Chocolate Chip Muffins
Here's a quick little recipe for chocolate chip muffins from Sweet Loretta, my wife (& head baker at the Chef From Hell Kitchen). The muffins in the first batch she made had tops that were really white looking so I immediately said, "Oh! Albino muffins! My favorite!" Sadly, subsequent batches of these tasty munchables looked normal and the muffins no longer had a ghostly hue. Heck, I'm keeping the name anyway. Hoo Hah!

Looking for something special to make this weekend? Here's a yumbo-licious cake recipe by my better half, Sweet Loretta, that is actually an interesting twist on a traditional 7up cake. The glaze has a subtle citrus flavor that keeps you on yer toes. "Hmmm, well... maybe just one more little piece... heh,heh!"

Ah, chess pie! My wife, Sweet Loretta, finally handed over the recipe for this Southern delight so that I can share it with you fine folks! The story of this sweet pie goes like this: Many years ago, when a Southern housewife was greeted with unexpected guests, she whipped up a pie using only basic ingredients that she had in her cupboard. When her guests raved about this simple, yet delicious pie and asked what it was called, the housewife coyly replied, "Oh, it's jess pie!"... and over the years the moniker of "Chess" Pie came into use!
