How To Make Your Own Mustard
Everything Old is New Again: My oh my! Mustard has been used as a condiment since the (whew!) 9th Century! How does one go about finding a new perspective on this marvelous edible? Make your own from scratch, of course! Hoo Hah!
Ingredients:
1 cup White Wine Vinegar
1/2 cup Water
1/2 cup Vegetabel Oil
1/2 tsp Celery Seed
1/4 tsp tsp ground White Pepper
1/4 tsp ground Cloves
4 Shallots, diced fine
2 tsp Kosher Salt
2 tsp White Sugar
1 cup whole Mustard Seeds
1/2 cup ground Mustard Seeds
Cooking Procedure: In a medium sized pot, combine the vinegar, water, vegetable oil, celery seed, white pepper, cloves, shallots, salt and sugar. Cover pot tightly and bring it to a rolling boil over high heat. Remove the pot from the heat and let the pot sit covered for 30 minutes. Strain and reserve the liquid from the pot. Discard the solid matter from the pot. In a food processor, add the whole and ground mustard seeds. Process this for 1 minute. With the processor running, add the pot liquid. Process for 1 minute more.
