Orange Crush Cake

orangecrushcake.jpg.JPG

Looking for something special to make this weekend?  Here's a yumbo-licious cake recipe by my better half, Sweet Loretta, that is actually an interesting twist on a traditional 7up cake.  The glaze has a subtle citrus flavor that keeps you on yer toes.  "Hmmm, well... maybe just one more little piece... heh, heh!"

Ingredients:

3 sticks unsalted Butter, softened

3 cups White Sugar

5 large Eggs

3 cups White Flour, sifted

2 tsp Orange Curacao liquore

3/4 cup Orange soda pop

For the glaze:

2 cups Powdered Sugar, sifted

2 TBS melted usalted Butter

3 TBS Orange Curacao liquore

3 TBS Whole Milk

Cooking Procedure:

Preheat your oven to 325 degrees

Grease & flour a bundt pan

In a mixing bowl, use a hand mixer to cream the butter & sugar until light & fluffy

Add the eggs, one at a time, with the mixer on low speed

Beat well after the addition of each egg

Blend the flour into this batter

Then, beat in the curacao liquore & the orange soda

Pour this batter into the greased bundt pan

Bake the cake for 1 hour to 1 hour & 25 minutes or until a toothpick inserted into the cake comes out clean

Place the cake on a rack to cool for 10 minutes

Then, invert the bundt pan to remove the cake

Place the cake on a platter to continue cooling

To Make the Glaze:

In a bowl, combine the milk & curacao liquore

Set this aside

Place the sifted powdered sugar in another bowl

Whisk in the melted butter

As you whisk the glaze, drizzle in the curacao/milk mixture

Whisk well until the desired consistency is achieved

Drizzle the glaze evenly over the top of the cake
