Sweet Potato French Fries
If you're looking for a change of pace when it comes to the type of spuds you cook, here's a tasty recipe for sweet potato french fries! I've served these in the various restaurants I've owned over the years and they're always a big hit!

Ingredients:
Sweet Potatoes
Oil for deep frying
Kosher Salt to taste
Cooking Procedure:
Heat the oil to 325 degrees in your deep fryer
Peel & slice your sweet potatoes into pieces that are about 1 1/2 inches long & 1/2 inch thick
When oil is ready, fry the sweet potatoes in batches
Fry lightly to blanch each batch of potatoes for 3 minutes
As you remove each batch from the oil, place them on paper towels to absorb excess grease
After the initial blanching of the potatoes, turn the heat of the oil up to 375
Once the oil has reached temperature: Working once again in batches, fry each batch of potatoes for 3 to 4 minutes; the fries should be golden brown & soft inside
As you fry off each batch, place them on paper towels to absorb excess grease
To serve: sprinkle some of the salt over the potatoes. If desired, either dust the potatoes with powdered sugar or put out a side dish of rich brown gravy.
Chef's Note: "Why do I have to blanch these spuds anyhow?" The reason you should blanch these potatoes is due to their sugar content. Unblanched sweet potatoes have a tendancy to turn black in the final stages of frying.

There's a place near my hometown that serves awesome sweet potato fries. I sometimes make my own version that are roasted rather than fried but they just don't compare. I guess it's time to break out the fry daddy and give your method a try. Now I just need to figure out the Jalapeno-Arugula Aioli dipping sauce!
I love sweet potato fries. I make them in the oven and they still turn out great!
We LOVE sweet potato fries. I sprinkle them with curry powder and sea salt and bake them. Mmmmm.... Mmmmmm!
