Sweet Potato Chips

Making your own potato chips isn't that hard if you have the right equipment; a small electric meat slicer and a home deep fat fryer are two essential tools for this recipe.  You can season them a variety of ways (I like a little cayenne & salt) -- try experimenting with flavors, you may suprise yourself!

Ingredients:

2 large Sweet Potatoes, peeled

Oil for frying

Kosher Salt

Cayenne Red Pepper

Cooking Procedure:

After peeling the sweet potatoes, cut off the pointy ends & discard them

Using an electric meat slicer, cut the sweet potatoes into paper thin slices

Soak the sliced chips in ice water for 2 hours

Remove the chips from the water & pat them completely dry with paper towels

Heat the oil in your fryer to 375 degrees

When the oil is ready, carefully slide some of the chips into the hot oil

Using a long handled spoon, move the chips around in the oil to prevent them from sticking together

Fry the chips until golden brown & crispy

As you finish each batch of chips, place them on paper towels to absorb excess grease

After all  the chips have been fried off & have drain on the paper towels, place them in a bowl

Season the chips with Kosher Salt & a light dusting of cayenne pepper

Toss well, taste the chips & adjust the seasonings to suit your taste
