Howdy Folks!  Welcome to my kitchen!  If you have a passion for cooking, then you've come to the right place (or blog, that is).  I've worked as a professional chef for over 20 years and in that time I have always enjoyed cooking what I call "seasoned" food; dishes that have substantial layers of flavor to them.  The different layers of flavor can range from mild to insanely hot, as long as the food has character and is not bland!  On this blog I'd like to share some of my favorite recipes for those of you who like to prepare foood that is flavorful, creative and challenging.  I'll be posting recipes which reflect the different types of seasoned dishes you can make in your home kitchen!  A quick note on the recipes: all herbs and spices will be the dried variety unless I  indicate otherwise.  Also, in some of the recipes I specify a particular product brand for some ingredients.  These are just my personal preferences; feel free to substitute your favorite product brands if you like.  The clock on the wall says it's time to hit the bricks so as Moe said to Joe, "Y'know, I gotta go!"
