Pumpkin Banana Pudding

One of the simple pleasures of this festive season is cooking up a batch of pumpkin banana pudding!  This quick dessert works well as a kinda offbeat addition to your Holiday dinner menu.  It's also easy enough to come up with your own variations, so let's strap on our aprons and give this recipe a spin!

Ingredients:

2 1/4 cups cooked Pumpkin Meat

1 1/4 cups mashed Bananas

1/3 cup Dark Brown Sugar

1/4 cup unsalted Butter (melted)

1/2 cup Heavy Cream

1/2 cup Sour Cream

1 TBS grated Orange Zest

1/2 cup pure Orange Juice

1/4 tsp Kosher Salt

1/4 tsp Ground Cinnamon

1/8 tsp Ground Nutmeg

1/8 tsp Ground Allspice

4 large Eggs

Cooking Procedure:

Preheat your oven to 350 degrees

Grease a 2 quart baking dish with butter or non-stick cooking spray

Separate the eggs into two small bowls & set aside

In a large mixing bowl, combine the pumpkin meat, bananas, brown sugar, melted butter, heavy cream, sour cream, orange zest, orange juice, spices & egg yolks

Whisk until completely blended

Set this pudding mixture aside

In a mixer, beat the egg whites until they are stiff

Fold the egg whites into the pudding mixture

Gently blend well

Pour the pudding mixture into the greased baking dish

Place the pudding mixture into the oven & bake 1 hour & 15 minutes

Serve the pudding warm with some fresh whipped cream on the side

not only does that look great, I've never tried pumpkin & bannana in the same dish! mmm.
