Orlando BBQ Tilapia

tilapia.jpgAh me!  We all have those days when we're pressed for time and it's hard to pull together a dinner that will please the whole gang at the dinner table.  What to do?  Here's a simple Floridian seafood recipe for just that type of day. 

Ingredients:

1/4 stick unsalted Butter

1 can Whole Peeled Tomatoes with juice (28 oz)

1/4 cup Cider Vinegar

1/4 cup Dark Brown Mustard

2 TBS Dry Minced Onion

1 TBS White Horseradish

1/4 cup TBS Orange Juice

1 TBS Worcestershire Sauce

2 TBS Dark Brown Sugar

4 large fresh Tilapia Fillets

Olive Oil

Dry Spice Mix:

1/4 tsp Kosher Salt

1/4 tsp Dark Chili Powder

1/4 tsp Ground Cumin

1 pinch Ground Cloves

Cooking Procedure:

Preheat your oven to 350 degrees

First, we'll make a simple barbecue sauce

In a medium sized pot, melt the butter over medium high heat

While the butter is melting, puree the canned tomatoes along with their juice in a food processor

When the butter in the pot is melted, add the tomatoes, vinegar, mustard, dry minced onion, horseradish, orange juice, worcestershire sauce & brown sugar

Stir well & let this come to a low boil

Reduce the heat to low & let the barbecue sauce simmer for 20 minutes

Remove the barbecue sauce from the heat

In a small bowl, combine all of the ingredients for the dry spice mix

Mix well & evenly coat both sides of the tilapia fillets with the spice mix

Grease the interior of a pyrex baking dish or oven-proof skillet with some olive oil

Place the fish in the oven for 5 minutes

Remove the fish & spoon a generous amount of the barbecue sauce over each fish fillet

Return the tilapia to the oven & let the fish bake for another 5 to 7 minutes; the fish should be soft to the touch

Serve immediately with some potato salad on the side!
